Cauliflower Spaghetti

Hi! My name is Raven. I’m a junior in high school, I’m a part of the social media team here at Rebel Ventures and this is my first ever HDAH blog entry.

 I came across this recipe one day while trying to figure out what to cook my ketogenic mother. A keto diet is a low carb ,and high fat if you want quick results, diet. For example, a good ketogenic meal would be a lettuce wrapped burger with a side of kale chips. I’ve also made a lot of pasta dishes while my mom was on her diet and substituted pasta for spiralized zucchini. So my objective was to find a good noodle replacement. After searching my refrigerator for about 3 minutes, I decided to go with the cauliflower. I figured it didn’t have too distinct of a taste that it would throw everything off and if I cook it so that it’s more of a stir fry, then it could be a sturdy base. However, the cauliflower that I had was already minced, which immediately gave me a disadvantage. Assuming you have a fresh cauliflower head (unlike me), I recommend slicing them into thin slices.

Ingredients:

2 Bell Peppers

1 White Onion

8-10 mushrooms

1 cauliflower head

1 jar of marinara sauce

1/2 cup of heavy cream

5 tbsps of fresh mozzarella

1 pound of ground turkey

3 tbsps of olive oil

Garlic Powder

Basil

Oregano

Salt and pepper

Or if you have any Italian seasoning blend, that’d be good too

Steps:

  1. Put the olive oil and ground turkey in a pan on medium low heat. Start breaking the ground turkey up. Don’t lid it. Check on it every couple of minutes. Keep breaking the meat until it’s in smaller pieces. 
  2. Cut up the peppers, onion and mushrooms into bite size pieces. This, along with the cauliflower, will help make up for the lack of noodles and provide more support for the base of the meal, the cauliflower. If you cut the pieces too small, it will blend into the sauce. 
  3. Cut the cauliflower into slices (example above) and put in a pan with a little olive oil and the rest of the vegetables on medium. Stir occasionally. (You can either cook this on a higher setting, very fast and get a crisper taste or you can cook slower and more carefully for a softer texture)
  4. Check on the meat. Cook until all of it’s brown, then add the marinara sauce and heavy cream. You can turn the heat up a little bit. 
  5. After about 3 minutes, add the mozzarella and season to your heart’s desire. Stir until the mozzarella is melted. 
  6. When everything is done, put the cauliflower/vegetables and meat/sauce into separate bowls. Serve and enjoy!
