03 Apr Rebel Nacho Cheese
Nacho cheese is a known food topping, whether drizzled on top of a yummy plate of nachos or used for dipping a pretzel, it’s a favorite for many of us. Since last summer, we have been trying to reinvent this classic by adding our “healthy deliciousness” spin to it. We have strived to replace the unhealthy ingredients with more nutritious and plant-based ingredients, and have now settled on the recipe.
The first time I made this product I was amazed to see that there was no dairy in it, even though it was creamy and orange just like normal cheese. Even though our nacho “cheese” is made differently from regular nacho cheese it still has that amazing taste to it plus it still goes well on everything.
The base of the ‘cheese’ is potatoes and carrots that are cooked first then blended with seasoning and lemon juice. We originally started experimenting with this recipe to use as a topping on our Rebel Lasagna. As a crew, we did not like the way commercial vegan cheese melted on the lasagna and wanted to implement an option healthier than any store-bought cheese or alternatives. We had success with our healthy delicious formula for ‘cheese’.
The crew liked the potato and carrot-based nacho “cheese” so much, we developed a recipe for plant-based nachos. Rebel Nachos are a new product we are working on. Our nachos are served with brown lentil barbacoa and a Rebel-made salsa. The Rebel Nachos shall soon be in our Rebel Market, coming soon to Dobbins Technical High School!
