19 Mar Tomato Soup for the Entire Family
I love to cook, especially soups and stews. My first memories of cooking are my great grandmother and I cooking breakfast and making sweets like cakes or cookies. So I have been cooking since I was a little girl. Now, I’m not saying I’m the best at it. My grandmother could tell you countless stories of me burning rice or cookies. I am getting better with time though, and I have decided that this break shall be used to work on improving my cooking skills and make my favorite recipes.
This week the Rebel crew was tasked with making healthy deliciousness at home since we can’t work together in the commercial kitchen. While we can’t be together physically, it is still important to the crew that we are making healthy and delicious foods that we can share with our friends and community. This was a perfect opportunity for me since I have been spending a lot of my time cooking.
I decided to follow my love of cooking soup and make my recipe for tomato soup. The season for soups and stews may be coming to a close, but it’s not too late for a tasty tomato soup. My tomato soup recipe is quick and easy to make and a great option for my entire family. There are five of us in my family so a recipe like this is great because it is enough for all of us to have for dinner or lunch and still have a little something for leftovers.
For this recipe, I use one yellow onion diced, jarred minced garlic or two fresh garlic cloves minced, two cans of pureed tomatoes (you can also use dice, whole or crushed tomatoes and blend it into a puree), 2 cups of chicken broth (can be subbed with vegetable broth for a vegan version), salt, pepper, oregano, Italian seasoning, and olive oil.
To join me in having this delicious tomato soup, heat 1 tbsp of olive oil in a large pot over medium heat. Then add the minced garlic and diced yellow onion and cook until the onions are translucent.
Once the onions are translucent add salt, pepper, oregano, and Italian seasoning, to taste, and add one cup of the chicken broth. Let that simmer on medium heat for about 10 minutes. Then add the two cans of tomato puree and the remaining cup of the chicken broth. Stir, and let it simmer on low for 20 minutes covered. After 20 minutes remove the soup from the heat and serve.
The finished product should taste sweet and savory, two flavor combos I personally love. If it is a little too savory, you can add a teaspoon of honey to add a bit of sweetness. I like to pair my soup with pita chips or a grilled cheese sandwich. Sometimes, I also like to add in some dried red pepper seeds for a little kick. Put your spin on it and enjoy!
