Back in the Kitchen!

We are happy to report  that we are now working in our commercial kitchen again! Our crew  is back to cooking up an array of healthy and delicious recipes, but now we are doing this with  extra safety measures to prevent the spread of the Coronavirus. Our rules require: frequent hand washing, no more than 8 crew members in the kitchen at a time and that everyone wears a face mask.

That is not the only thing going on. We have themed food competitions each week. Each week, I select a cuisine/theme that we use in the kitchen. So far we have done Indian and Tex-Mex. The kitchen team receives a Google Doc or Slide that explores the history of the cuisine.

For the Tex-Mex cuisine, crew members learned how the cuisine is a blend of two cultures and  how that is expressed through the food. Members of the crew put a healthy delicious spin on the cuisine by making spinach tortillas from scratch and used them to make grilled chicken Tex-Mex burritos.

For the Indian cuisine crew members learned about the 11 basic spices used in many Indian dishes. The crew also learned the process of how the food is cooked and made but also how it’s prepared. With this knowledge they made a potato and delicata squash curry and a take on mango lassi using pineapples instead.
