Spicy Roasted Chickpeas


Hey everyone! I’m Maritza, a Senior at Penn and a Graphic Design Mentor here at Rebel. I’ve been on the crew for about a year, and one of the many things I’ve learned during my time at Rebel is that chickpeas are awesome! From hummus to aquafaba, to a high-protein snack – chickpeas are fun
and delicious. For my Healthy Deliciousness at Home Challenge, I wanted to make a snack that doesn’t require too much preparation, is cost-effective, and high-protein. We learned at Rebel with our Penn Med visitors that protein is great at regulating blood sugar and giving you energy, so with all the remote work we’re doing, I knew that roasted chickpeas would be a great alternative to sugary or salty snacks like soda or chips. If you like spicy, crunchy snacks (Flamin’ Hot Cheetos and Takis lovers, yes that means you!) then this will be the perfect snack!

Ingredients:

  1. 1 can of chickpeas
  2. 1 tbsp of Lawry’s low-sodium seasoned salt
  3. 1 jalapeno, sliced  
  4. ½ lime
  5. 1 tsp of olive oil

Instructions:

  1. Preheat your oven to 425 degrees. 
  2. Drain and rinse your chickpeas.
  3. Layout a napkin and pour the chickpeas on top, patting dry with another napkin on top. Roll around until dry. 
  4. Add a little bit of olive oil and mix them around to coat them very lightly.
  5. Sprinkle your seasoning all around and toss the chickpeas to coat evenly. 
  6. Pour the chickpeas into a pan.
  7. Slice a jalapeno and place all over the pan. 
  8. Place into oven and bake for 40 minutes. Move them around once at 20 minutes. 
  9. Serve them with a sprinkle of lime juice for a deliciously spicy snack!
