No Cooking Gas but We can still eat good


I’m a foodie but I don’t consider myself a cook. My mom is a beast when it comes to the kitchen so I became a good taste- tester at least. When I do cook I just like inventing the process as I go with a little bit of rhyme & sometimes without reason. I also don’t like to have to cook and prep for more than an hour, 2 hours tops (which has a .00003% of happening).

I was inspired to create this recipe after reading a book by the late rapper Prodigy authored, “Commissary Kitchen: My Infamous Prison Cookbook.” In the book he’s only cooking with one appliance, a toaster oven. Since I had no running gas in my apartment to use the stove, I utilized P’s resourcefulness and channeled the infamous-ness in myself.

 

TOASTED NOODLE SOUP

INGREDIENTS:

  • Noodle soup
  • Black eyed peas
  • Edamame 
  • Sweet potato
  • Brown potato

 

INSTRUCTIONS: 

Step 1:  Rinse (1) sweet potato and (1) brown potato with warm water for 30 second.

Step 2:  Pre-heat toaster oven to 400° F in (Broil) mode for 10 minutes.

Step 3:  Slice sweet and brown potatoes in thin slices (I only used half of both potatoes).

Step 4: Fill a deep oven pan with 24 oz. of water and broil for 20 minutes.

Step 5:  Put potato slices, ½ cup edamame and ½ cup black eyed peas in pan for 30 minutes.

Step 6: Remove pan from toaster (caution, it’s hot) and pour veggies into a separate bowl & drain water.

Step 7: Refill pan with 32 oz. of water and place in the toaster for 10 minutes.


Step 8: Pour 1 packet of noodle soup into pan and cook for 15 minutes.

Step 9: Remove pan from toaster (caution, it’s hot) and pour soup into bowl with veggies (sprinkle black pepper on top).
