Making Cookie Dough with Chickpeas

A short time after the first trial of Banana Whips, we took on the task of creating a Cookie Dough that would make a perfect pair. Whether mixed into desserts or sprinkled on top, cookie dough is a mouth-watering addition for many of us. It was clear, adding cookie dough would make the Whips even tastier.

We set out to develop a recipe that is packed with nutrition and found that we could sub flour and butter with chickpeas. With a high fiber content and some added protein, we were excited to add chickpeas to the mix. Our first test recipe included chickpeas, honey, coconut oil, sunflower butter, and semi-sweet chocolate chips. On the first try, it did not have the consistency of the cookie dough so many of us were used to.

On our next try, we added flaxseed meal to help make the texture more like traditional cookie dough, and we tried maple syrup instead of honey. We decided that maple syrup was a better sweetener and that the flax seeds were a great addition. We are still testing the recipe out each week to determine which one will make its way alongside our Banana Whips at the Rebel Market.
