31 miles away…

The Rebel  Ventures crew traveled to Kennett Square, which is 31 miles outside of Philadelphia, to purchase Swarmbustin’ Honey.  Luke is the name of the local farmer that supplied us with the honey.  Surprisingly, the color, texture, aroma, and taste had changed due to seasonal conditions.  We initially made the bars with our original recipe, which contained 1.12lbs of honey per batch. We then decided to change the recipe and incorporated less honey.  To compare and contrast the recipes, the crew participated in a taste test.  The crew preferred the recipe with less honey.

    To maintain the secrecy of the recipe, half of it is produced by one KFC supplier before it is given to McCormick , who add the second half.

    Again, in an attempt to lighten our refined sugar load, I have been playing around in the kitchen a bit to find some alternatives to our favorite dessert recipes. Replacing the granulated and brown sugars in traditional oatmeal cookies with local honey, created a wonderful cake-like cookie. The floral taste of the honey, paired with the nuttiness of these local oats, makes this cookie one you just must try!
